Hua Yuan Brasserie Chinoise is Hilton Manila’s fine dining Chinese restaurant specializing in Shanghai Cuisine!
Hua Yuan Menu Highlights
The Red Date Milk Tea is something unique to Hua Yuan. It’s a light, refreshing drink that resets the palate between dishes.
The appetizer sampler consists of pickled Cherry Tomatoes in Roselle Tea Sauce, Pork Stomach with Enoki Mushroom and crispy glazed Heirloom Shrimps. Out of the three, I like the heirloom shrimps most!
Hua Yuan Manila’s flavored Xiao Long Bao was also a crowd pleaser. We tried three flavors: Crabmeat (yellow), Gong Cai (green) and XO (red). The last one was slightly spicy.
After sampling a variety of flavors, the light clear broth of the Double Boiled Black Chicken Soup with Mushroom helped the palate transition to the mains.
The Duo Flavored Shrimp is a yin yang of flavor. One side is lightly flavored braised scampi while the other side is breaded and deep-fried with wasabi mustard.
The Steamed Cod Fish with Chinese Wine was my absolute favorite from the entire meal! Each savory bite spikes during mid-palate with a piquant note, then tapers off as it is neutralized by the tongue.
The Braised Beef Short Ribs was very tender! It’s our second favorite dish that meal. Definitely worth a try.
The Deep Fried Crispy Seaweed in Yellow Croaker is a delightful snack. The dish comes with two dips: sweet chili sauce and spicy mayo sauce.
Last but not the least, the Salt and Pepper Crispy Pork Knuckle is a great source of collagen with the tenderloin under the crispy skin. It’s great with the powder seasoning that it comes with!
The Wok Fried French Beans with Salted Egg is also staple choice that goes well with the Shanghai Fried Rice.
I really wasn’t going to try the rice, but people were saying that the Shanghai Fried Rice was good. It’s very similar to the claypot rice that my Ama makes at home with cured pork. It can be eaten by itself for sure.
