How the Okonomiyaki was Born

Established in Japan by Eikichi Nishino in 1946, Botejyu takes pride in its name. In Japanese, “Bote” is the sound of an okonomiyaki just being flipped, and “Jyu” is the sound it makes as it sizzles on a teppan grill. The name is a representation of this specialty restaurant’s humble beginnings as Japan’s pioneer in making Okonomiyaki and Okosoba.

Born in the gourmet city of Tamade, Osaka after WWII, Botejyu started out as a specialty okonomiyaki restaurant. It was difficult surviving in the post-war Japanese economy, and everyone faced a food shortage. However, the emerging black markets in Osaka that carried supplies and provision from the US made it possible for Nishino to innovate. One of the key merchandises being traded was American flour which, when mixed with water, makes pancakes. He found a way to make something easy-to-cook with flour and whatever else was available. Thus, the okonomiyaki or Japanese pancake was born. Interestingly enough, the word okonomiyaki literally means throwing in whatever ingredients you like then grilling the mix on a pan. In his case, Nishino threw in whatever was available at the time to survive.

It was also Eikichi Nishino who made Japanese mayonnaise popular as a condiment for okonomiyaki. Up until that time, mayonnaise was only used for cold fold. Nihisno’s okonomiyaki and Jap mayo combo revolutionized the culinary scene in Osaka, and the trend quickly spread. Today, the okonomiyaki has become a staple dish in Japan.

Years later, Botejyu developed new items including the “okosoba”, which is basically okonomiyaki and yakisoba in one dish. Over 70 years later, Botejyu still delivers authentic Japanese food in every single branch they open around the world, continuously innovating dishes every year!

Brought to the Philippines in 2016 by Viva International Food & Restaurants, Inc., Botejyu opens its 13th branch in Greenbelt 3! (My first time in Botejyu was when it opened in Vertis North.) Apart from its signature okonomiyaki and takoyaki, this Japanese comfort food resto also has Paitan Ramen, Sushi, Sashimi and Tempura as well!

Botejyu’s New Dishes 2019

The Seattle Roll (P315) is a delicious combination of avocado, cream cheese, salmon, lettuce, and original Botejyu mayo.

Seattle Roll (PHP 315) – Avocado, Cream Cheese, Salmon

The premium Pressed Unagi Sushi (P995) has the delicately subtle flavors of eel glazed in homemade teriyaki sauce. It’s pricey but it’s totally worth it. Yum!

The Crispy Fried Prawn Mayo Roll (P320) is for prawn lovers.

Shrimp Tempura Sushi Roll (PHP 295)

For people who want quality sashimi, Botejyu now has Assorted Sashimi Platter (3kinds P425/ 5kinds P695) for those wanting variety, because variety is the spice of life.

Sort of a modern fusion are the crunchy Tori Katsu Bun and the grilled BBQ Char Siu Bun for PHP 125 per piece.

Tori Katsu Bun and Grilled BBQ Pork Bun (PHP 125/pc)

Probably one of my faves is this breakfast-looking dish called Garlic Rice with Bacon and Egg (PHP 195). It’s so savory!

A new dessert on the menu is the Warabimochi with Vanilla Ice Cream Sundae (PHP 150). It has corn flakes at the bottom which had contrasting texture against the warabimochi.

For something different yet familiar, you can try the Teppan Baked Banana with Vanilla Ice Cream (PHP 130), aka the “Japanese Banana Split”.
