Poblacion’s newest gastro experience is a Neo Filipino bistro called Lampara by Chef RJ Ramos, Alphonse Sotero and Prince Tan. Chef RJ chose the name lampara (or “lamp”) because of his fascination with fire and how he can illuminate the way for Filipino cuisine through Lampara’s contemporary Filipino menu. Employing French techniques on local ingredients, Chef RJ sheds a new light on Filipino dishes.
The Rice Cups (PHP 220) are a fashionable version of the Thai ___ which has snippets of Filipino flavor, such as longganisa, aligue, togue, and tofu, all in tiny wonton cups.
The Ensalada (PHP 180) is a frisee sitting on baba ganoush using homemade tinapa oil and salted egg powder to accentuate its fresh flavors. I sensed hints of coco jam because the smokiness was mixed with something complex, which goes to show how intricate this dish is.
The Pork (PHP 380) is a stunning combination of savory porchetta, star anisse, and sweet pork floss. The contrasting taste and texture kept us from experiencing umay.
The Tanigue (PHP 420) is marinated with a soy-based sauce with citrus foam on the side.
For dessert, we were served with the Yema & Tsokolate (PHP 220), a wonderfully embellished plate of malagos, condensed milk and honey.
The cocktails are crafted by head bartender Lawrence Soriano. All drinks are perfect with the food, but they’re also perfect on their own.
(Orange) Pana Kakana Kana (PHP 350) – Gin, cardamom, and black pepper.
(Purple) Asiong (PHP 350) – Gin, black currant, and cinnamon.
(Red) Gasera ni Simoun (PHP 380) – Rum, grapefruit, rosemary.
(Rose pink) Gayuma ni Albano (PHP 350) – Tequila, guyabano, and campari.
