Cocina Peruvia at The Podium (Ortigas)

My first ever visit to Cocina Peruvia by Chef Him was at the new branch in The Podium. While the ambiance emulates the casual street bars of Latin America, the bar resto still maintains the sophistication befitting the location.

Cocina Peruvia Podium
We started off with the Ceviche Nikkei, which puts an Asian twist on the classic ceviche dish. I remember thinking that the fried salmon skin’s crunch was perfect against the fresh Jackfish in citrus juice and coconut milk.

Ceviche Nikkei
The Brochetas de Lomo Y Pollo was so tender and juicy! The beef and chicken churrasco were marinated in anticucho sauce and grilled to perfection. Served with a side of chimichurri and aji panca (Peruvian red pepper).

Brochetas de Lomo Y Pollo
I died when I had the creamy Adobo Peruvia. The Filipino in me went to heaven the moment my tongue made contact with the slow cooked pork belly in sweet, creamy sauce. The explosion of flavor was followed through by a lingering umami. I completely underestimated this dish.

Adobo Peruvia
The Parilla Platter also exceeded my expectation. These were no ordinary grilled chicken, pork belly and salmon. Each one was well marinated and/or tenderized before being grilled. The aji mango barbeque sauce went really great with it. Served with chorizo rice, papas fritas, French beans and fried banana. The Parilla Platter is also available individually as lunch sets.

Parilla Platter
The meal sustained my satisfaction ’til the very end. I thought that the Chocolate Pudding was good, but the Maize Panna Cotta was even better! The flavor was so round and complex, that it didn’t need any of the toppings, though the corn flakes added some texture and the whipped cream added a different layer of taste. Cocina Peruvia could have done away with the dried fruit completely.

Chocolate Pudding
Let’s not forget that Cocina Peruvia is also a bar. We got to try the Coco Sour a pleasantly citrusy, medium-bodied cocktail that uses the local liquor lambanog.

Coco Sour
Towards the end of the meal, Chef Him Uy de Baron dropped by. I never got to tell him how impressed I was. Overall, Cocina Peruvia exceeded my expectations through and through, so I whole-heartedly give it a perfect score.
