Injured by our recent trip to Socorro, Miguel and I had to cancel our flight to Zamboanga the week after. We had planned to go to Sulu and Tawi-Tawi. Alas, the universe had other things planned for us. Weeks later, I somehow found myself back at Palm Grill, an inspiring establishment that represents that part of Mindanao.
After celebrating a year of success, Palm Grill releases another fascinating dish from Southern Mindanao! Known for its Green Chicken from Zamboanga, our favorite Filipino restaurant brings us closer to the war-ridden, hard-to-get-to parts of the Philippines through their local cuisine.
Launched just last July 13, 2018, the new Tiyula Itum is a soup dish from Tausug, Sulu in Mindanao. It resembles the nilaga (beef broth) and the bulalo (bone marrow stew). It uses the same 7 herbs and spices as in the Green Chicken’s blacked coconut curry, plus an 8th one called the lengkuas mint. Palm Grill’s version of the blackened coconut curry is a lot healthier. They toast the coconut until it’s golden brown as opposed to burning it until it’s black as night, which is why the sauce is lighter than the traditional, potentially carcinogenic version. Apart from this, the Tiyula Itum curry sauce contains turmeric, which provides health benefits.
Tiyula Itum also consists of a bone marrow which is torched upon serving, as well as some tender beef short ribs. The fall-off-the-bone quality is achieved by pressure cooking the beef short rib for 1.5 hours. If the foot-long marrow isn’t enough, you can order another for only an additional PHP 100.
The lingering subtle flavors of the marrow and the black soup were so good that I didn’t want to wash them down, but if I had to choose something to drink, it would have to be the refreshingly tart and sweet Lychee Lemonade (PHP 90)!
While it’s probably a good idea to finish off with tea, we just couldn’t help but try out the Knicker Iced Treat (PHP 190), Zamboanga’s version of halo-halo containing creamy vanilla topped with fresh watermelon and mangoes and drizzled with strawberry syrup. Surprisingly, I finished an entire cup!
The Tiyula Itum is another reason to keep coming back to Palm Grill!
