Initially, I had my reservations about Cabalen, but I was pleasantly surprised by their quality! Cabalen Alabang is a brightly-lit, family buffet restaurant that specializes in traditional home-cooked Kapampangan cuisine. They’re over 28 years old now and still delivers timeless, tried and tested, quality Kapampangan home-cooking. Their newest branch is in Alabang Town Center and it had just opened on October 26, 2017.
We checked them out on a weekend and the place was jam-packed. Albeit, they still had room for more–this place is huge! They’ve got approximately 180 seating capacity, plus a built in function room for special events. Cabalen’s regular buffet costs PHP 298 (excluding service charge and VAT), and if you ask me, I think it’s worth every peso. If and when you find yourself at a Cabalen Alabang, we recommend you try the following.
The Kare Kare has a creamy consistency with an essence of savory pork. The key to its flavor has to do with the viscosity of the tasty sauce sticking to the meat and vegetables as you scoop them up and bite into them.
The Dinuguan is sour, savory, and rich in flavor. We suspect that sourness is a common taste preference with Kapampangan cuisine.
The Crispy Kang Kong is carefully deep-fried in order to deliver a crispy, tasty, light and healthy side-dish.
The Pritchon is a chewy, tasty, unique way to enjoy deep-fried pork. You’ve got to wrap it in rice pita and pack it with your choice of savory and tangy sauces.
The Tapang Kalabaw is not your usual tapa! It’s chewy, stringy, and slightly sour to pique your interest and whet your appetite.
