I was recently invited to a wine tasting event hosted by Barcino Corporation at Pablo Bistro in Salcedo Village showcasing Gonzalez Byass Wines. The Spanish product line has come to the Philippine market, and I was among the privileged to few to try it. Pablo Bistro’s Chef Amado Garcia Fernandez whipped us up a spectacular 7-course meal to go with each wine represented that evening.
To start off, we had the Scallop Confit with Citrus Guacamole on Parmesan Biscuit, a mouthful of savory delight paired with the bubbly refreshing Vilarnau Rose Reserva. Up next, we had the chilled Goat Cheese Soup with Boquerones served in a shot glass. The tart combination of goat cheese and marinated anchovies made a really great appetizer!
Soon after, we progressed to whites. The Vinas Del Vero Chardonnay went really well with the spoonful of Mussel Escabeche with Mushroom and Idiazabal Cheese, and the Quinoa Salad with Jamon, Grilled Leeks, Red Beet and Apple Vinaigrette. The salad had both fresh and crispy jamon which provided strong flavors contrasted nicely by the apple vinaigrette and red beet dressing.
We moved on to the reds, some Beronia Vinas Viejas 2011 and Beronia Vinas Viejas Reserva 2010 paired with the mains. Cooked for 36 hours, the Lamb Shank was so tender that it came off the bone easily! It was really good, served with Couscous and Spicy Apple Compote to complement the dish.
While risotto is one of my favorite pastas, I can’t say that I loved the Creamy White Risotto with Shrimp and Saffron Aioli. It had the complexity I was looking for, but it was sort of lacking in flavor and more al dente than usual, which led me to believe that the kitchen was rushing to make this dish.
The Faux Chocolate Arroz con Leche and Mango marked the end of an awesome meal. Just as sweet on its own was the amber Sherry Cream Solera dessert wine. (I was so full at this point that I only managed a few sips!)
